No Nut, Low Histamine, Pesto Sauce

I have been experimenting with flavors, ingredients and trying to make our meals delicious with whole ingredients. Mark’s gut does best with specific temperatures and certain food storage. It’s crazy, but if we deviate from the temps or the food his body goes crazy. He begins to look like death is at his door, he has no energy and it is down right scary.

Low Histamine Diet
This is what Mark looks like when he is having a reaction to something he has eaten or needs to eat protein. It’s amazing how quickly his blood sugar level gets low.

Thankfully God has blessed me with the ability to know what I can substitute for oils, eggs, textures and flavors. I am excited to share a few with you.

I am trying to keep our diet flavorful and like most people I do not like to eat the same thing all of the time. Soy sauce and tomatoes are off of Mark’s list of what he can eat. This means I need to get creative with sauces to spice up our life. I wanted to find a pesto sauce with ingredients we can eat, however I didn’t find one, so in true Robin fashion, I made my own recipe.

No Nut, Low Histamine, Pesto Sauce

Nut free Low Histamine pesto sauce

Recipe:
1/2 cup dried basil (should be fresh but we didn’t have any)
1/2 cup olive oil
1/2 of an avocado
Oregano to taste
Salt to taste
About 1 1/2 cups chicken broth

In a blender put in the first five ingredients and a little bit of the chicken broth. Blend until smooth, continue adding chicken broth until you reach a consistency you like.

The kids even liked the pesto. Maddie said it tastes like spaghetti sauce but without the tomato. She is excited to try it on pizza!

    In the spring do you get nettles growing around you? I know people who have made pesto sauce with nettle greens. It is an anti inflammatory and high in iron! Maybe mark can eat it?!?!

      We love making nettle tea with honey, so many great nutrients from this plant. The gem is when you can find the tops still intact, those are the most tender. Thank you for reminding me of this!
