Leftovers come to the rescue again! Lemon Parmesan Couscous with steak Rice Bowl’s Cooks in 5 Minutes Couscous mix!

IMG_2625Leftovers come to the rescue again! Tonight I found myself tired and not really wanting to fix dinner, nor was I wanting to clean up afterward. I needed a one-pan wonder that would not only feed us but would also be delicious! Thanks to Rice Bowl’s Parmesan Couscous mix supper was a one-pot delicious wonder!IMG_2626

I put my skillet on the stove added a bit of butter and a bit of olive oil (I really like the mixed flavor the two oils give to dishes) then I turned the burner to medium. While the skillet was heating I thinly sliced leftover grilled steak, diced some onion, and thinly sliced a few baby carrots to add to the pan. IMG_2628

Once the carrots and onion were al dente, I added the corn and prepared the couscous as directed on the box. Adding the water with a bit of lemon juice and the packet of seasoning into the skillet and letting it come to a boil.  Once it came to a boil I added the couscous, removed the pan from the heat and let it set for 5 minutes. IMG_2632

Our kids ate it as a rice bowl, while my husband and I ate it in warmed spinach tortillas. This dish could very easily be interchanged with various flavored couscous mix’s, meat, and veggies to fit your families budget and tastes! IMG_2633

A one pot wonder with no artificial colors, no MSG added, and 0g trans-fat per serving, I will definitely be making again!
