I had to post this website as soon as I had made this syrup. It’s from the website Kelly the kitchen kop.
1/2 c. organic cocoa powder
2/3 c. Rapadura (An unrefined sugar, you could also use palm sugar.)
1 c. water
1/2 t. sea salt
1 t. vanilla
3 T. butter
Mix everything together in a small saucepan and keep whisking on medium heat as the sugar dissolves and it gets smooth. This comes out thin, and you could add 2 t. of arrowroot flour to thicken a little, but then it doesn’t stir into the milk as easily. Makes 2 cups. Store covered in the fridge. Use 1 or 2 teaspoons per cup of milk.

this is fantastic! i've been wanting a fair-trade chocolate syrup, now i can just make my own with my cocoa powder – thanks! one question though, would regular sugar work?
if you need some organic sugar, I would love to give you some! I buy mine in bulk and it would be way better for you. I am part of food coop and buy all my flours, sugars, and such in large quaities. I love buying in bulk because it's cheaper, I don't have to run to the store all the time and I have things on hand when I need them! I could give some to Katrina and she could give it to you when she sees you! I do think regular sugar would work, you could also use honey or maple sugar, either of those are good organic choices for a sugar when you don't have sucanant or rapadura. But if you use regular ole sugar, that's ok too. At least you are cutting out the corn syrup and other gross things added! I tripled my batch so I have a pint of chocolate syrup ready in the fridge! Yummy in coffee drinks, on ice cream, the sky is the limit!
