Campbell’s Cheesy Chicken and Rice Casserole

Cheesy Chicken CasseroleI need to be able to change recipes based upon what I have in my fridge and cupboards. I need recipes I can pull out and whip a meal into shape in minutes for the days I forget to meal plan or pull something out of the freezer. This Cheesy Chicken and Rice Casserole from Campbell’s is one of these great meals!

Cheesy Chicken CasseroleRecipe:
1 can Cream of Mushroom soup (any cream of something soup will work)
1 1/3 cup water (chicken or beef broth makes this even better)
3/4 cup uncooked long-grain white rice or brown rice
2 cups Fresh or frozen veggies (I have used tex-mex veggies, stir fry veggies, so use whatever works for you)
1/2 teaspoon onion powder (fresh chopped onion works great, too!)
4 Skinless, boneless chicken breasts halves (I’ve used fish, pork, and beef and it turns out wonderful)
1/2 Cup shredded cheddar cheese (I’ve made this with or without cheese, it works both ways)

Cheesy Chicken CasseroleStir soup, water, rice, veggies, and onion powder into a 12×8 baking dish (a 9×13 works fine also).

Cheesy Chicken CasseroleTop with chicken. Season chicken as desired. Cover.

Cheesy Chicken CasseroleBake at 375 degrees for 45 minutes or until done. Top with cheese if desired.

Makes 4 servings

I have made this casserole as a tex-mex dish adding mexicorn and salsa. I’ve also used it as a stir fry using soy sauce, brown sugar, and sesame seeds.
