These are crunchy on the outside, soft and gooey on the inside. Just like a brownie should be. I was trying to make a different cookie, but it turned out I didn’t have all of the ingredients. So, this recipe was born.
Brownie Cookies
Preheat over to 350 degrees
Cream together:
1 1/2 cup butter
3 eggs
3/4 cup white sugar
3/4 brown sugar
vanilla (measure with your heart)
3 TBSP chocolate syrup
Whisk together:
2 1/4 cup sugar
4 tsp. baking powder
1/2 cup baking cocoa powder
Optional add-ins:
M&M’s, white chocolate chips, pecans, or anything else you think sounds good to add.
Combine dry ingredients into the wet ingredients. Add the optional add-in if desired. Using a cookie scoop or a spoon put cookie dough balls on the cookie sheet. Bake 10-12 minutes depending on the size of the cookie.
Ice Cream sandwich:
Allow brownie cookies to cool completely. Place a scoop of ice cream on the bottom of one of the cookies, top a second cookie on top of the scoop of ice cream. Gently smush the cookies together. Using a butter knife gently go around the edge of the outside of the cookies.
