For pretzel dough
1/2 cup sourdough discard
2 1/4 tsp yeast
2 cups water
1/2 cup sugar
1/4 cup molasses
1/4 cup butter melted
3-4 cups flour
Egg wash:
egg yolk
1/2 cup water
For water bath:
baking soda
Combine sourdough starter, yeast, water, sugar, and molasses. Let set 5 minutes.
Add 3 cups flour, stir that in, add butter, mix that in – add in flour to make dough elastic.
Let rise until double. Once doubled preheat oven to 425 degrees. Fill large pot half full with water, add about 1/4 cup baking soda to the water stir to dissolve, once boiling turn down to a slow rolling simmer.
Once dough is doubled turn out onto floured surface. Cut in to strips and roll out into ropes with your hands. You can either pretzel it or make pretzel bites.
Once water is ready put a few pretzels in water and boil 80 seconds. Take pretzels out of water and place on baking sheet (I put parchment paper on mine).
Mix egg yolk with water, brush on pretzels. Add seasons seeds, course salt, cinnamon/sugar, whatever you like on them.
Bake for 20-25 minutes or until golden brown. Enjoy!
